2003 – Exotic Fruit Verrine

The name "Exotic Fruit" just touches the tip of the iceberg, so to speak, in describing this magnum opus of the dessert world. A mixed tropical fruit compote is the dominant taste sensation, but is most definitely enhanced by the presence of a thick and creamy vanilla custard tapioca, along with a tangy and airy mango mousse. This tropical delight could stand on its own, but as we know that "presentation is everything", it's topped off with a chocolate "pirouette" and a large white chocolate Rice Krispy pearl that's been color-coordinated especially for this color-themed work of art. A few leaves of fresh mint and orchid petals add additional color and allure. A frothy and delicious end to any affair, save one for me!
